Ingredients (Serving: 1)
・1 cups water
・1 cups dried chickpeas
・1/4 15oz can of coconut milk
・1 tablespoon curry powder
・2 teaspoons turmeric
・1 teaspoon cumin
・1 teaspoon ginger
・salt & pepper to taste
1. Before cook, soak chickpeas in plenty of water overnight.
2. In a large pot of boiling water, add chickpeas and coconut milk. Return mixture to a boil then reduce to simmer for 10 minutes. When chickpeas have softened, then stir in spices and cook another 5 minutes.
3. Serve with cauliflower rice!
